A banana hammer

What does this picture have to do with thermodynamics?

The bucket on the left contains liquid nitrogen boiling at 77 Kelvin (-196 Celsius or -320 Farenheit).

After a piece of banana and a section of rubber hose have been immersed in the nitrogen for a few seconds, their properties change so that the banana can be used to hammer the rubber into a wooden block. (Don't try this at home!)
